"If you like to eat bread, but want to stick to a healthier lifestyle, heres a recipe for dietary bread with 3 types of flour"

Ingredients

  • spelt flour - 7.7 oz (220 g) wholemeal
  • rye flour - 1.8 oz (50 g) wholemeal
  • white flour - 4.2 oz (120 g) durum wheat
  • water - 1 cup (250 ml)
  • olive oil - 1 tbsp. + to grease your hands
  • fresh yeast - 0.35 oz (10 g)
  • salt - 1 tsp.

How to make

Dissolve the yeast in slightly warmed water and mix it, until white flour mixture is obtained. Leave it to activate for 10-15 minutes.

Add the spelt flour and rye flour, add olive oil, salt and gradually knead a smooth dough.

If it is very hard, add a little water and if it sticks to you - add a little rye/spelt flour.

It is best to knead it in a food processor to make it easier for you, because the duration of work with the dough is 4-5 minutes. It will take longer if you do it by hand.

Put the dough in the bowl for about an hour to rise. Then knead it lightly and shape the bread. Transfer it into a baking tray lined with parchment paper.

Make deeper slits on the surface, in order to make baking easier. Sprinkle it with flour (whichever one you want) and leave it to rise again for an hour.

Bake the bread in a preheated oven at 390°F (200°C) at a low position in the oven. The bread is ready when you hear a hollow sound when you tap the crust.

Leave the bread to cool on a wire rack and when it has almost cooled completely, you can cover it with a towel.
