How to make
Boil the quinoa according to the instructions on the package. Leave it in a large strainer to drain from the water and cool.
Boil the potatoes and while they are hot, peel them with gloves, so that you don't burn yourself.
Place the hot potatoes in a large bowl, add salt and mash them with a fork. In this process, they will cool down and you can now add the egg to them. Add the spices - parsley and coriander (finely chopped), ground black pepper and cumin and crushed savory herb.
Crush the garlic and add it to everything else along with the flour. Mix well, until a homogeneous mixture is obtained and pour the cooled and perfectly drained quinoa.
After stirring the mixture again, if it seems thin, add a little more flour. Taste it and if necessary, add more salt or spices, which you want to predominate.
With generously greased hands, scoop from the mixture and form the patties, roll them in flour and arrange them at a distance in a baking pan covered with baking paper.
Drizzle the potato patties with olive oil and bake them, until they aquire a slightly golden color in an oven preheated to 410°F (210 degrees).
Take out the baking pan, sprinkle the potato and quinoa patties with grated yellow cheese and put them in the oven for a little longer, until it melts.
Eat them warm with the addition of an yogurt sauce or fresh salad.
