  • fresh broccoli - 10.5 oz (300 g)
  • quinoa - 3.5 oz (100 g)
  • parmesan - 1.8 oz (50 g)
  • flour - 1 tbsp.
  • eggs - 1 pc.
  • olive oil - 2 tbsp.
  • parsley
  • dill
  • salt
  • black pepper
  • curry
  • yogurt sauce
  • yogurt - 4 tbsp. (strained)
  • sour cream - 3 tbsp.
  • garlic - 1 clove

How to make

Cut the broccoli into pieces. Wash and blanch them in boiling water for 5 minutes.

Immerse the blanched broccoli in cold water, then strain them in a colander.

Wash the quinoa well in a colander and boil it in 2 cups of salted water for 15 minutes.

Then strain it well.

Finely chop the broccoli and add to it the boiled quinoa, parmesan, salt, black pepper, finely chopped parsley and dill, the egg and a spoonful of flour.

Mix well and form small balls using an ice cream scoop.

Arrange the vegetable meatballs on a tray lined with baking paper and drizzle them with olive oil.

Then put them to bake in a preheated oven at 390°F (200°C) for 25-30 minutes.

While the broccoli patties are baking, prepare the yogurt sauce, by mixing the condensed milk with the sour cream and adding salt and a pressed clove of garlic.

Serve the delicious quinoa and broccoli patties with yogurt sauce and a glass of white wine.
