How to cook
Boil the quinoa for approximately 15 minutes and if it has not absorbed all of the liquid, strain it well.
Finely chop the onion, carrot and garlic and stew them in a pan with oil, until they are left in fat.
Add them to the quinoa and mix well.
Add the salt, cumin and turmeric and mix well again.
Finely chop the parsley and add it to the mixture.
You beat two eggs and add them to the quinoa and vegetables, by mixing them well.
If necessary, refrigerate the mixture for a while, so that it can set, but I didn't have to.
Heat the oven, form the quinoa patties from the mixture and arrange them on a baking tray (or a non-stick one) lined with baking paper and greased with oil.
Bake the vegetable patties at approximately 450°F (230°C), until they aquire a golden color and turn them after 20 minutes on the other side.
Serve the Oven-Baked Quinoa and Vegetable Patties with salad or beetroots with garlic and walnuts.
