How to make
First, prepare the quinoa by washing it and soaking it in warm water. Set it aside.
Finely chop the onion, spinach and garlic. Fry the onion and garlic in fat. When they soften, add the spinach and 1 cup of water to steam them. Stir periodically.
Strain the quinoa from the water and transfer it along with the spinach into a baking pan. Add 2 cups of hot water, add the mint, dill and as much salt as you like.
Stir, wrap the baking pan with aluminum foil and bake in a preheated 370°F (190 degree) oven. The dish is ready when the quinoa grains pop and become transparent.
Then remove the foil and bake for another 5 minutes in a high heated oven until the quinoa with spinach forms a light crispy crust.
