How to make
Wash the quinoa, so that it isn't bitter afterwards. To develop its taste and aroma, bake it - strained, but still wet in a pan over medium heat. When it starts smelling nice, like nuts, remove it and pour water. Boil the quinoa prepared for about 10-12 minutes, strain it if there is excess liquid and leave it to cool.
Grate the zucchini, season it with salt and allow it to drain. Squeeze it very well and add to the cooled boiled quinoa grains. Beat the egg, add the breadcrumbs, grated gouda, more salt (according to your taste) and chopped parsley.
Stir the mixture with a spoon until it is homogenous. It should be thick, so add more breadcrumbs, if necessary, so you can more easily shape the patties.
Take from the mixture by hand and form balls, which are then flattened slightly and rolled into the breadcrumbs.
Arrange the patties in a baking pan covered with baking paper, sprinkle them with olive oil and put them in a preheated oven at 390°F (200 degrees).
Bake them until they aquire a golden brown color and serve the vegetable patties warm and in the company of your favorite sauce.
