How to make
Remove the heads of the sardines (could use anchovies, as well) and fillet them. Split them open.
Soak the bread in milk, strain it, and crumble it into a bowl. Add the grated parmesan and a pinch of black pepper. Stir to a homogeneous mix.
Place a tsp of the filling on each piece of filleted fish, roll it up and secure with a toothpick. Grease a baking tray with olive oil abundantly.
Cover tray with tomato slices and place a fish roll on each slice. Drizzle with olive oil. Preheat the oven to 390°F (200 degrees) and bake for 15-20 minutes.
Toast the sliced bread. Rub each slice with some garlic and add a little olive oil. Place a slice of baked tomato and arrange a sardine roll on top.
Serve the Sardine Bruschettas with a glass of chilled white wine.
