Heat olive oil in a suitable pan and season with salt, garlic and thyme sprigs.
Cut the baguette into slices. Fry them until golden in the aromatic olive oil.
Peel and cut the tomatoes into small cubes. Cut the basil leaves into thin strips. Season the tomatoes with salt and pepper, add the basil and chopped garlic.
Spread the tomatoes on the toasted slices.
Garnish each bruschetta with a parmesan pepper. Pour a thin stream of balsamic vinegar and serve.
