"A garlic soup that will keep you warm on cold winter days"

Ingredients

  • flour - 3 tbsp.
  • garlic - 3 large heads
  • yogurt - 3 tbsp.
  • dried parsley - 1 tbsp.
  • onion - 1/2 onion
  • oil - 3 1/3 tbsp (50 ml) + extra
  • celery - 1 small stalk (leaves)
  • dried thyme - 1 tbsp.
  • bread - 2 slices

How to make

Grab 2 heads of garlic and peel them from their outer skin. Slightly split the top and place them in a greased baking pan. It is important not to burn it! Add more fat and bake it for 15 minutes at 200 degrees.

Finely chop the remaining head of garlic along with the celery and onion or you can also blend them in a blender. Fry them with oil and salt. You need to cook them in a pot on low heat, so that they soften and do not burn.

Add the flour, stir for a minute or two and little by little pour 1.5 liters of water, while stirring with a stirrer to avoid lumps. Season with spices and leave the appetizing garlic soup simmer.

Peel the baked garlic. Mash it into a puree and then add salt and yogurt. Add the mixture to the aromatic soup. If you want, add butter as well.

After 20 minutes, the warming garlic soup will be ready.

Use the slices of bread to make homemade croutons. Cut it into cubes and bake them in a baking pan until they aquire a golden color.

Serve the garlic soup with croutons and celery as a side dish!
