How to make
Wash the duck wings, if necessary clean them from feathers and pour water over them.
Boil them and at the beginning of boiling, remove the foam that has formed on the surface.
Boil for half an hour and along with the duck add the cleaned, peeled and thoroughly washed whole potatoes (3 pcs.). Peel the carrots and onions, wash them and chop them. We also add them to the duck and the potatoes.
Boil the duck soup until all of the ingredients are cooked and have softened. Then take out the duck legs and potatoes.
In a bowl or plate, mash the potatoes with a fork (they do not have to be very well mashed). Put the mashed potatoes in the soup.
Debone the duck wings and cut the meat into small pieces and just like the potatoes, add them to the soup. Season with salt, black pepper, turmeric and crushed dried celery leaves in quantities, that suit your taste.
Add the noodles and boil the soup a while longer - until it's ready. If necessary, add more warm water.
Remove the cooked soup from the stove and prepare the thickener. In a pot or saucepan, mix the yogurt, egg, flour (1 tsp.) and a pinch of citric acid.
Stir until you have a homogeneous mixture and place it on the stove. Boil the thickener, while stirring at all times with a wire stirrer, until it thickens like cream.
Remove it from the heat and continuing to stir, while pouring a few ladles of the boiling soup into it.
Pour the resulting thickener into the soup, stir and serve warming duck soup.
