Ingredients

  • duck meat - 0.9 lb (400 g) and offal
  • onion - 1 onion
  • carrots - 1 pc.
  • peppers - 1 pc.
  • potatoes - 4 pcs.
  • noodles - 2 handfuls
  • tomatoes - 1 pc.
  • salt
  • eggs - 1 pc.
  • yogurt - 3 tbsp.
  • parsley
  • black pepper

How to make

The duck meat is cut and along with the offal, it is covered with water. Add salt and leave them to boil.

The onion, carrot and pepper are cut into small pieces and added to the meat after it softens. Duck meat needs more cooking. No oil or other fat is added because the duck meat is fatty enough and will release fat.

Peel the potatoes, cut them into small cubes and add them to the broth. Add the noodles. After the potatoes and noodles are soft, add the pureed tomato. When the tomatoes are cooked, pull the pot aside.

Make a thickener. In a separate bowl, mix the yogurt and egg yolk. Scoop a ladle of the duck soup and by stirring constantly, add it to the thickener to even out the temperatures. Finally, pour the mixture in a thin stream into the pot with the soup.

Season with black pepper and sprinkle with chopped parsley.
