  • calamari - 14 oz (400 g)
  • garlic - 3 cloves
  • fresh parsley - 1 small bunch
  • olive oil - 1/4 cup
  • wine vinegar - 1 - 2 tbsp.
  • sugar - 1/3 cup
  • salt - by taste
  • ground black pepper - by taste
  • For the brine
  • salt - 1/2 cup
  • bay leaf - 1 - 2 pcs.
  • black pepper grains - 1 tsp.
  • fish spices - 1 tbsp.
  • water - 1 liter

How to make

Wash and clean the calamari.

Prepare the brine: add all of the components of the brine in boiling water and boil them for a few minutes.

Boil the calamari in the brine: if they're small - 10 seconds from the moment they start boiling, if large - 15 seconds.

For the sauce, finely chop the parsley, add the chopped garlic, vinegar, salt, sugar, black pepper and olive oil. At this stage, try the garlic sauce and adjust it to your taste (some like it more sour, others sweeter, etc.).

Remove the cooked calamari from the brine and cut them into rings or strips.

Combine the still warm calamari with the sauce and leave them to cook for another 20 minutes.
