How to make
Peel, wash and grate the potatoes coarsely on a grater. Heat the olive oil and put them to fry. Once golden brown, add the chopped into strips peppers.
As soon as they soften, add the beaten eggs and fry it like an omelette on both sides. Before they harden, add salt and black pepper to taste.
Serve the Spanish omelette with a side of tomatoes, sliced into circles and pre-fried lightly with the chopped onions.
