Ingredients

  • lamb - 4.4 lb (2 kg) (cut into portions)
  • spring onions - 2 bunches
  • mint - 5 stalks
  • oil - 1 cup
  • salt - by taste
  • black pepper
  • paprika

How to make

The meat is washed, dried and cut into portions. Grease it with oil in which we have added salt, black pepper and paprika.

Give it 15 minutes, so it can absorb the spices and marinate. Place in a baking pan. The spring onions are cleaned and chopped along with the mint.

Distribute it evenly around the meat in the baking pan. Pour a glass of warm water, cover the baking pan with foil and bake it in a preheated oven at 390°F (200 degrees) for 2 hours.

From time to time, check to see there's water in the baking pan. At the end, remove the foil and bake the lamb for another 30 minutes, so it can form a nice crispy skin.

Serve the roasted lamb on top of boiled rice and fresh mint. Delicious and festive!
