Ingredients

  • lamb - 2.2 lb (1 kg)
  • paprika - 1 tsp minced
  • oil - 3 tablespoon olive
  • green onions - 2 stalks
  • onions - 5 - 6 small heads
  • carrots - 3, medium
  • parsley - 4 - 5 sprigs
  • mint - 1 handful fresh
  • salt
  • pepper - to taste

How to make

Cut the lamb into cubes. Roll the pieces with salt, pepper, 1 tablespoon of oil and mix so as to better cover the pieces. Leave to stand for a minimum of 30 minutes. Preheat the pan or deep frying pan, add the remaining oil and lamb pieces.

Fry them until they are white, then add the green onions, largely chopped onions. Mix and allow 4-5 minutes to stew with the lamb. Meanwhile, cut the carrots into large chunks and add them.

Remove from the heat, add 2/3 tea cup water, parsley, mint, salt and pepper, stir and pour it in the stew.

Cover with foil and set to bake at 370°F (190°C) for about 2 hours. Remove the foil and bake for another ten minutes.
