How to make
Pour olive oil with salt, paprika and black pepper into a bowl and mix very well.
Finely chop the spring onion and the spearmint and add them to the mixture.
Mix everything well again.
Prepare a large tray in which you can put the lamb meat and rub it well with the prepared mixture on all sides.
Pour the broth, cover with aluminum foil and place it in an oven heated to 390°F (200°C) for 20 minutes to roast the lamb.
When this time is up, reduce the heat to 320°F (160°C) and cook for two and a half hours.
The roasted lamb with onions and spearmint is served with a spring salad.
