"Perhaps the easiest Chinese dish with which to take your first steps in Asian cuisine."

Ingredients

  • pork - 17.5 oz (500 g), lean
  • eggs - 2
  • sugar - 1 tbsp
  • vinegar - 1 tbsp
  • oil
  • starch - 1 tsp
  • onions - 2 heads
  • garlic - 1 - 2 cloves
  • tomatoes - 2 - 3 tbsp tomato sauce
  • salt - to taste

How to make

Cut the pork as if for Beef Stroganoff – into thin slices of 1/32 (1 mm) thickness and a length of 2″ (5 cm). Chop the garlic and the onions. Mix the starch with the beaten eggs and salt to obtain a batter.

Heat plenty of oil, roll each piece of pork in the crumbing and put it in to fry. If necessary, top it up with a little more oil and fry the onions and garlic in the same pan.

Pour in the tomato sauce and 2 tablespoons of hot water. After 2 minutes, add the sugar, salt and vinegar. Once the sauce has thickened, pour the pork in and stir constantly.

Serve the Gu Lao Rou pork with boiled rice.
