How to Make Delicious Muffins

Muffins with dried fruits, fresh fruits, candied fruits, nuts, marmalade and jam have long been popular. They are served as desserts with coffee, tea or syrups and are very simple to prepare.

In order not to waste time on long baking of a sponge cake or pastry, use small silicone, metal and paper molds. This applies to classic recipes for pastries, but also to more modern ones such as vegan and protein muffins.

The main ingredients of muffins are butter, sugar, eggs and flour, they are involved in each recipe, but in different proportions and this determines the final result.

For flavor, the following are added to the muffin batter:

- Cocoa, chocolate, coffee;

- Fruits, dried fruits, candied fruits;

- Vanilla, various essences, cinnamon;

- Cottage cheese, dairy products.

And to make muffins more airy and soft, baking powder is added to the better. It can be replaced with baking soda, which is mixed in acid to remove its specific smell. The finished muffin batter is poured evenly into muffin molds, then baked.

Silicone molds are single or interconnected. Metal molds must be greased with butter or oil before pouring the batter. Paper molds are used for light batter and do not need pre-treatment, but require special support.

Otherwise, the batter for your fluffy chocolate muffins may come out of the mold.

Here is an idea for very delicious muffins and how to make them.

Fruit muffins with white chocolate

lemon juice – 2 tsp.

milk – 8.5 fl oz (250 ml)

oil – 4.2 fl oz (125 ml)

eggs – 1

flour – 9.2 oz (260 g)

baking powder – 3 tsp.

salt – 1/4 tsp.

sugar – 5.3 oz (150 g)

white chocolate – 7 oz (200 g)

fruit – 0.9 lb (400 g) strawberries, raspberries, blackberries or a mixture of them

Method of preparation:

Mix the egg, butter, lemon juice and milk in a bowl with a mixer, beat until smooth. Break the chocolate into small cubes and mix it with the flour, baking powder, sugar and salt. Mix the dry and liquid ingredients and mix slowly with a spatula until smooth.

Add the selected fruits and be careful not to mash and crush the fruits when stirring. Distribute the batter into the paper molds and place chocolate cubes on top.

Bake in a preheated oven at 360°F (180°C) for about 25-30 minutes.

You can decorate the muffins by covering them with colored or white sugar icing, chocolate or cream using a piping bag, glazes, fresh or candied fruits.
