Did you know that we eat unripe cucumbers? Ripened ones are large, yellow and with large seeds. Which we consider to be the “mother” of future harvests. By the way, in Greek the word “ágouros” (this is how the ancient Greeks called the cucumber) means – unripe.
90% of this vegetable is water, which makes it almost ideal for a healthy diet. One of the most popular options for winter food are pickles, which are always in demand.
Preparing delicious pickles is not at all difficult, the most important thing is to follow the recipe step by step.
The products for them are: fresh and small cucumbers (gherkins), horseradish roots and leaves, dill seeds, garlic, onion slices, black peppercorns, allspice, vinegar, sugar and salt.
It is mandatory that the gherkins are fresh, with a hard skin and are small in size.
Wash them very well under running water and soak them in cold water for 4-5 hours.
Wash the horseradish (root and leaves) and dill very well under running water and chop them. Peel the garlic cloves and onion, cut them into slices.
Wash the jars and lids, scald them in boiling water. At the bottom of the jars, place the chopped horseradish, dill, garlic, onion and black peppercorns. Cut the stems from the gherkins and arrange them tightly in the jar, the first row upright, and the top in a slightly inclined position, but not to the top of the jar, but 2 fingers below.
Add the salt, sugar and vinegar, and the amount is according to the recipe, add cold water (best boiled) one finger below the top of the jar. Tighten the metal lid carefully and securely.
Boil the jars in a pot with a metal rack underneath them and the water in which they are boiled should be 3 fingers above the lids. Once the water boils, remove the pot from the heat immediately. Remove the jars from the boiling water and turn them upside down with the lid facing down. Leave them like that until they cool completely and your pickles are ready for the winter.
Recipe for Classic Sterilized Pickles
Gherkins - quantity according to the screw-top jar
Salt - 1 level tsp.
Sugar - 1 full tsp.
Vinegar - 40 ml (9 degree)
Onion - 2-3 slices
Garlic - 1 clove
Allspice - 1 grain
Black pepper - 5-6 grains
Horseradish root - 1 pc.
Horseradish leaves - 2 pcs.
Dill - 1 bunch
