Ingredients

  • rice - 1 cup (220 g)
  • potatoes - 5.5 oz (150 g)
  • onions - 1 small head
  • carrots - 1
  • parsley - 2 tablespoons, chopped
  • salt - if needed
  • cayenne pepper - optional
  • mushroom broth - 2 1/2 cups (600 ml)
  • breadcrumbs
  • oil - for frying

How to make

Boil the rice with the broth. Boil the potatoes as well. Chop the onions and carrot finely. Grate the boiled potatoes.

Heat a little oil in a pan on moderate heat and braise the onions and carrot for about 5 min. or until softened. Leave them to cool.

Mix together the boiled rice, grated potatoes and braised onions and carrot. Add the finely chopped parsley. Season with paprika and black pepper.
