Meanwhile, heat the oil and fry the sliced mushrooms. Add the finely chopped onion and garlic, as well as the spices - salt and black pepper.
Stew the vegetables until they soften, mix them with the rice and serve the dish, generously sprinkled with parsley and a little soy sauce.
