Ingredients

  • black olives - 6 oz (170 g)
  • butter - 1.7 oz (50 g)
  • onions - 8.8 oz (250 g) of onions
  • spring onions - 5 - 6 stalks
  • rice - 10.5 oz (300 g) (suitable rice)
  • tomatoes - 10.5 oz (300 g) optional
  • hot water - 5 cups
  • salt
  • black pepper
  • parsley

How to make

Pour cold water over the olives so that it covers them and boil them in it. Once the water starts boiling, strain them.

Meanwhile, finely chop both types of onions and stew them in oil until they soften. Add the washed rice and olives, stir and simmer for 4-5 minutes.

Transfer into a baking pan, add the tomatoes, season with salt, black pepper and parsley, add more water and bake in a preheated 360°F (180 degree) oven until it's fully cooked.

Serve with freshly ground black pepper and lemon slices.
