Ingredients

  • rice - 1 cup (250 g)
  • zucchini - 1, small
  • tomatoes - 2
  • olives - 10 - 12
  • onions - 1 head
  • carrots - 1
  • spinach - 3.5 oz (100 g)
  • salt
  • black pepper
  • turmeric - 1 tsp

How to make

Chop the onions and braise them. Add the chopped carrot and zucchini. After a few min., add the rice and finally the finely chopped tomato and spinach.

Pour the mixture into a suitable, deep oven dish. Pour in about 2 4/5 cups (650 ml) water and add the spices. Put the dish in the oven at 430°F (220 °C) for 30 min.

Take it out, arrange the diced tomato and olives on top. Return to the oven to bake for another 10-15 min.
