How to make
Clean and chop the onions coarsely.
Put the pork shank in a clay pot, smear it with olive oil, sprinkle with salt, black pepper, paprika, cayenne pepper and cumin.
Add the bay leaf and allspice next to the shank, distribute the onions all around and under it. Pour in the beer.
Put the lid of the clay pot on and place it in the oven. Heat it up to 390°F (200 °C) and cook 30 min., then lower the temperature to 320°F (160 °C) and bake for 2 hours.
Take off the lid and bake until golden for a final 15 min.
Try to find the allspice and bay leaf and remove them before serving.
