How to make
For this gorgeous sponge cake, we use the whole orange, so it is advisable that the citrus is organic or well washed. Also, its peel and skin should not be very thick.
Cut it into pieces, remove the seeds, if any. Grind everything else, to make it in small pieces, not a smooth mixture.
Beat the eggs with sugar until fluffy. Gradually add olive oil, grinded orange, milk and vanilla sugar while mixing with the mixer.
Finally, pour in the flour, pre -mixed well with baking powder. If the spelt flour is fine, it can be sifted even better. Mine is whole grain and has flakes, so I can't sift it, I just mix well to distribute the baking powder in it.
With smooth movements of the spatula or a wire whisk, stir to produce a smooth and homogeneous sponge cake batter.
Pour half of it into a greased silicone cake mold. Distribute the chocolate crushed into small pieces, then cover with the remaining mixture.
Bake the orange sponge cake in a preheated oven at 360°F (180°C) for about 40-45 minutes or until fully baked.
Remove from the oven, allow a sponge cake to cool in the mold for about 15 minutes, then turn it over on a wire rack and wait for it to cool completely.
For a beautiful finish: Melt on low heat the white chocolate with the cream. Sprinkle the orange sponge cake with this sweet decoration and when it hardens, you can cut and serve it.
