"The favorite sponge cake of young and old, but in a healthier version with apples"

Ingredients

  • eggs - 2 pcs.
  • baking soda - 1 tsp.
  • apples - about 1 cup / 2 - 3 pcs. medium - sized
  • vanilla - 1 powder (0.2 g) or essence
  • cinnamon - 1 level top tsp.
  • whole grain flour - 1 cup
  • brown sugar - 1 cup
  • sunflower oil - 6 tbsp. + for spreading
  • nuts - optional (and raisins)
  • powdered sugar - for sprinkling

How to make

With a wire whisk, thoroughly beat the eggs in a large bowl for a few minutes. Pour the brown sugar and leave it to dissolve (if there are any lumps, crush them).

Peel and cut apples into cubes. Add them along with the cinnamon, vanilla and cardamom. If desired, you can diversify the delicious apple sponge cake with a handful of crushed nuts. Evenly mix everything with whole grain flour, until a homogeneous mixture is obtained.

Pour the mixture into a baking pan with a size of about 80°F (25 cm) in diameter, which is have smeared with sunflower oil and sprinkled with whole grain flour. Bake at 360°F (180°C) for about 30 minutes.

After it is ready, cut the cake into 6-8 pieces and serve it completely cooled and sprinkled with powdered sugar (using a sieve or a fine strainer).
