How to make
The apples are washed, cleaned from the seeds, peeled and cut into cubes. Cut the plums into cubes and add them to the chopped apples. Sprinkle with the lemon juice and stir to prevent the apples from darkening.
Just before adding them to the sponge cake mix, sprinkle with 1 tablespoon of breadcrumbs and mix well.
In another bowl, beat the eggs (by hand, with a fork or a wire whisk/hand held mixer - no mixer), add the oil and beat some more until you get a homogeneous mixture, like a thin mayonnaise. Yogurt with baking soda, which has been added in it is added to them.
Separately mix the dry ingredients - oat bran, whole grain flour, salt, cinnamon and crushed walnuts. They are mixed well.
Mix the liquid with the dry ingredients, add the apples. Stir until everything is well mixed.
If you think that your mixture is too thick, add the 50 ml milk or yogurt.
The mixture is poured into a greased cake tin, placed in an oven heated to 360°F (180°C) and baked for 35-40 min or until fully baked. The time, of course, is not the same for all ovens, you must keep an eye on it.
After the apple sponge cake is removed from the oven, it is glazed with a preferred topping or a combination of two or more.
