Ingredients

  • bananas - 8 oz (220 g) or 2 pcs. well ripe
  • whole grain flour - 7 oz (200 g) spelt or rye
  • milk - 1/5 cup (70 ml)
  • baking powder - 1 tbsp (10 g) or 1 tsp. baking soda
  • butter - 3 oz (85 g) + for spreading
  • eggs - 2 pcs.
  • brown sugar - 6.7 oz (190 g) or white + 1 tsp. for sprinkling the mold
  • salt - 1 pinch
  • lemon juice - 2 tsp (10 ml) freshly squeezed
  • walnuts - 1.8 oz (50 g) crushed

How to make

Put the butter and sugar in a bowl and beat, until a smooth mixture is obtained. Add the eggs one at a time, until they are completely absorbed into the mixture.

Add the milk, mashed bananas with lemon juice, salt, flour and baking soda or baking powder. This time I used whole grain rye flour.

Beat briefly, just enough to get a homogeneous mixture.

Finally, add the chopped walnuts and mix gently with a wooden spoon.

Transfer the banana bread mixture into a rectangular cake tin or sandwich bread mold. It must be greased with butter and sprinkled with brown sugar and flour in advance. Level out the top and pop it into a 360°F (180°C) oven with a fan.

Bake the delicious classic banana bread for about 45-50 minutes, or until it has risen nicely and acquires a golden color. Pierce the inside with a toothpick, if it comes out dry and clean, the banana bread is ready.

Wait 5-8 minutes, then remove the sweet bread from the mold and leave it cool before slicing it.

Serve the whole wheat banana bread with walnuts with a scoop of ice cream, sour cream or simply with a cup of aromatic coffee.
