How to make
Prepare the dough for pan-fried garlic breads rolls by sifting the flour into a bowl or directly on the kitchen counter.
Make a well in the middle and pour the slightly warmed water into it. Crumble the yeast and mix, by scooping in some of the flour as well.
Cover with a towel (if working with a bowl) and let the yeast activate for 8-10 minutes.
Beat the egg with the salt and 3 spoons of olive oil. Pour it into the well.
Take the flour and mix until it is all absorbed, then knead a smooth and non-sticky dough.
Spray with garlic spray, wrap in foil and let rest for just 15 minutes.
During this time, mash the garlic cloves into a paste and finely chop the parsley.
In a bowl, mix the garlic, parsley, 5-6 spoons of olive oil (or more), a pinch of salt and black pepper.
Tear small balls from the dough, flatten them, spread them with the garlic mixture and gather the ends and form a ball. Let them rise for about 40 minutes.
Place bread rolls in a greased baking pan over medium heat. Keep an eye on them and when they acquire an appetizing color on one side, flip them to the other side. It is best to cover them with a lid so that they are baked perfectly.
As soon as you already have a golden crust on both sides of the bread rolls, reduce the heat by one or two degrees and spread the garlic mixture on top of the bread rolls as well. After seconds, turn them to the other side, also spread that side and leave them under the lid for a short time.
Spread once more and remove the aromatic bread rolls from the heat. Do not lift the lid for a few minutes, to stew them nicely.
Serve them warm with your favorite spreads or appetizers.
