How to make
Peel the mushrooms from their outer layer. It is not good to wash them, because they absorb water, but still, if it's unavoidable, it should be done briefly and under running water and they shouldn't be soaked. In this case, it is good to wash them, because we will use the stumps as well and they are harder to peel.
Cut the mushrooms into slices (lengthwise) and peel the garlic and cut it into thin circles.
Heat the butter and olive oil and put the garlic in them first and then the mushrooms. The pan should be wide and if possible, the products should be in one layer and not in a pile. This is necessary to fry the mushrooms, not to stew or boil them, as they will release liquid. In that case, they would shrink a lot and not remain as tender and delicious.
Cook them for just a few minutes - 3-4, while stirring occasionally. A sauce will form, but it will evaporate more easily and only a little will be left, which will keep them juicy.
Season the pan-fried mushrooms with a little salt, black pepper and oregano and pour them into a plate. Grate the yellow cheese on top and serve them warm.
