How to make
The fish is cleaned and washed. The heads and fins are cut off, you can use them in another recipe for making fish soup or fish stock.
Using a sharp knife, make diagonal cuts on both sides of the fish.
Transfer the fish to a baking tray, sprinkle them liberally with salt and pepper, if you like spicy, you can also sprinkle with coarsely ground red pepper. When sprinkling, do not miss the slits on the skin and inside of the fish. Finally, sprinkle the fish with the grated rind of 1/2 lemon.
Cut 1/2 lemon into wedges and tuck under the fish.
For the marinade, peel a small tomato and cut it into large pieces. To it add 1/2 a small head of red onion, 2-3 cloves of garlic, the juice of 1/2 a lemon, the leaves of 1 sprig of fresh rosemary, 1 tsp. red pepper, 1 tsp. tomato puree and 50 ml. olive oil.
Blend the mixture and brush the fish with it. Pour a little water on the bottom of the baking tray and bake the fish in the middle of a moderate oven 360°F (180°C) for about 20 minutes, first on one side, then turn the fish over and bake for another 10-15 minutes on the other side as well.
During the baking of the sea bream and after turning it over, brush it with the remaining marinade.
We serve the delicious oven-baked bream with a slice of lemon and a salad of your choice.
