How to make
Clean the red sea bream fish and wash it well inside and out, dry it with kitchen paper.
If you are going to work with this fish for the first time, it is best to cut the fins and gills with scissors, because they are very sharp and it is best to work with gloves.
With a thin knife, make light cross cuts on the fish.
In a small bowl put 1 clove of garlic, crushed into a paste, a pinch of salt, a pinch of black pepper, the juice of 1/2 lemon, juice of 1/2 orange and 1 tsp. olive oil
Spread this mixture everywhere on the fish and if there's any of the mixture left put it on the fish before baking it.
Fill the fish with slices of lemon and orange, sprinkle it with thyme, add rosemary and pieces of butter.
Wash the sweet potatoes and cut them lengthwise into thicker slices and sprinkle them with salt.
Cut 1/4 from the celery root, peel the outer layer and cut it into chunky cubes and season them with salt.
In a rectangular baking pan covered with baking paper and drizzled with 2 tbsp. of olive oil, place the fish, arrange the potatoes, celery cubes and the remaining garlic around it, without peeling it.
Drizzle a little olive oil and the rest of the mixture on the fish.
Put the baking pan with the fish and vegetables to bake in a preheated oven at 480°F (250 degrees) for about 45 minutes.
Serve the fish dish with potatoes with a juicy salad of fresh vegetables.
