Ingredients

  • sea bream - 2 pcs. medium or small (about 600 g cleaned)
  • tomato puree - 10 - 12 tbsp.
  • white wine - 4/5 cup (200 ml)
  • olive oil - 2/5 cup (100 ml)
  • parsley - 2 tbsp. (dried or freshly chopped)
  • bay leaf - 2 - 4 pcs.
  • rosemary - 2 sprigs or 2 tbsp. dried
  • chives - 5 - 6 stalks
  • black pepper - by taste
  • salt - by taste

How to make

Wash and dry the surface and bellies of the fish. Rub them with salt and black pepper.

Pour the tomato puree and wine into the baking pan. Place the sea bream fish on top and add 1 bay leaf (or 2 if smaller ones) in their bellies. Place the rosemary sprigs in them as well.

Wash the garlic cloves without peeling them, just remove the outer flakes. Crush them lightly with the wide part of a knife or palm and arrange them around the fish.

Drizzle them with olive oil, sprinkle with more salt, parsley and finely chopped chives and put them in a preheated oven at 450°F (230 degrees). Bake them for 10 minutes and reduce the heat to 360°F (180 degrees) for another 15-20 minutes.
