You can use ready chicken fillets or debone a whole chicken. Beat the mustard with olive oil, lemon juice well and add the marjoram, nutmeg, ground walnuts, pepper and salt to taste.
Coat the chicken pieces with this mixture and put them to sit for 30 minutes in the refrigerator directly in the tray in which you will bake later. Then remove it, pour on white wine or rosé and set it to bake at 360°F (180 °C) until ready.
Pour the wine sauce over the meat 2-3 times. Serve a portion of chicken meat in wine with fresh salad.
