How to make
The pork kidneys are washed and cleaned from the skin, if they have any.
They are sliced and marinated in a mixture of chili jam, mustard, salt, black pepper, oil and left in the refrigerator for two or three hours.
Then they are grilled on a grill pan until well done.
They are turned every two or three minutes.
I serve the cooked kidneys with a salad of cherry tomatoes, small mozzarella and olives.
These kidneys are an exceptional delicacy.
The pan-fried kidneys with slices of bread and salad are suitable for dinner.
But on their own they can be a perfect appetizer.
