Ingredients

  • pork liver - 2.2 lb (1 kg)
  • leeks - 3 sprigs
  • carrots - 1
  • tomatoes - 10.5 oz (300 g) from a tin
  • oil - 4/5 cup (200 ml)
  • red wine - 2/5 cup (100 ml)
  • black pepper - 1/2 tsp.
  • paprika - 1 tbsp.
  • oregano - 1 tsp.
  • water - 2/3 cup (150 ml)
  • flour - for rolling
  • sugar - 1/2 tsp.
  • salt - to taste

How to make

Wash and cut the pork liver into large pieces.

Salt the pieces and roll them in flour.

Pour about 2/3 cup (150 ml) of oil into a baking pan and put the pieces of liver in it.

Put the baking pan in a heated oven and bake the liver at 430°F (220°C) for about 20 minutes.

During this time, heat 3 1/3 tbsp (50 ml) of oil in a deep vessel and stew the finely chopped leeks in it.

Add the grated carrot and stew for about 5 minutes.

Put the tomatoes and pour the red wine.

Sprinkle with black pepper and paprika, oregano, sugar and salt to taste.

Pour about 2/3 cup (150 ml) of warm water and stew the vegetables for about 10 minutes.

Pour the sauce over the pieces of liver and cook in the oven for another 20 minutes at 430°F (220°C).

Serve the finished oven-baked pork liver with leeks and pour yourself a glass of red wine.
