How to make
Cut the pork kidneys in half and clean them. Place them in a bowl and add 2 tbsp. vinegar and 1 tsp. salt.
Add water to the mixture and leave them to soak for about 30 minutes.
Remove them from the water and leave them to drain.
Heat the oil and butter in a pan and add the kidneys with the open side facing downward and fry them for about 5-6 minutes on each side.
Grate the carrot and coarsely chop the onion and peppers.
Heat the oil in a pot and stew the onions and carrots, then add the peppers and stir.
Sprinkle with black pepper and pour the sauce over the canned tomatoes and a little water.
Season with salt, add the tomatoes and leave them to simmer.
Sprinkle with savory herb and add the kidneys cut into pieces.
Stew and remove them from the heat.
Serve with chopped parsley, if desired.
