  • black lamb liver - 1.1 lb (500 g)
  • peas - 1 jar
  • flour - 6 tbsp.
  • eggs - 1
  • lemons - 1/2
  • black pepper
  • breadcrumbs - 6 tbsp.
  • oil - for frying
  • milk - 3.4 fl oz (100 ml)
  • garlic - 1 clove
  • butter - 1 tbsp.
  • mayonnaise - 1 tbsp.
  • baking soda
  • thyme

How to make

Carefully peel the skin off the lamb liver. Sprinkle it with the soda and leave it for about 30 minutes.

Meanwhile, prepare 3 deep dishes. In one, beat the egg, pour the juice of half a lemon and sprinkle with salt, thyme and black pepper. Pour the flour into the other and the breadcrumbs into the last plate.

Wash the liver and dry it thoroughly, then cut it into pieces.

Roll each piece of liver - first in the flour, then in the egg and finally in the breadcrumbs.

Arrange the breaded pieces on a board.

Heat oil and fry the liver. Strain onto kitchen paper and serve the beer appetizer with a side dish of your choice.

In this case, the side dish is pea puree. Pour the peas from the jar into a pot, adding the juice. Pour the milk and boil for 10 minutes. Add a clove of garlic.

Strain the peas and mix with the mayonnaise and butter. Blend and garnish the liver.
