How to make
The eggplant is peeled and cut like a fan not all the way through.
Spread with 2 tbsp. of the oil and sprinkle with salt.
It is placed directly in the basket of the fryer, fanning it out nicely to bake it well.
Turn it on at 390°F (200°C) for 15 minutes. Then it is taken out on baking paper so that the filling does not run out.
The slices of tomato, processed cheese and yellow cheese are placed in the cuts.
Sprinkle with black pepper, a pinch of salt and the remaining 1 tbsp. from the oil.
Turn on at 390°F (200°C) for 10 minutes.
When serving, the Eggplant Fan in Air Fryer is sprinkled with parsley if desired.
