How to make
Choose medium-sized eggplants that are longer and less plump.
The eggplants are cut into thicker slices and placed in salted water for about an hour. Then they are washed and dried with kitchen paper.
Spread the eggplants well on both sides. Bake in the air fryer on the frying program for 15 minutes at 400°F (205°C). They are turned once.
Put a slice of tomato and a piece of mozzarella on the baked eggplants, but you can have cheese, cheddar, whatever you want. Bake briefly to melt the mozzarella slightly.
You can also cook the eggplant with mozzarella in the oven. Either way, this is a great keto recipe.
