How to make
Boil cauliflower cut into florets in lightly salted water. Strain well and let it cool.
Put the cooked cauliflower in the jug of a blender along with the shredded cheese (it should be harder), the garlic, the egg, the dry bread crumbs, salt to taste and a little almond or coconut flour.
Run on high speed to get a smooth and thick mixture. If necessary, thicken with more almond flour.
In this case, I used coconut, it has incredible absorbent properties and is perfect for removing excess moisture, but it is slightly sweet and I had to add a little more salt and garlic.
Put the resulting dough for half an hour in the refrigerator, then with greased hands form cauliflower patties and arrange them in a tray covered with baking paper, which must also be well greased.
Drizzle with oil and bake at 360°F (180°C) with a fan until the patties are golden.
At home, we love them in two versions - with mayonnaise sauce or with tomato sauce.
