How to make
After we have mixed and cleaned the chili peppers, we put them in a pot of a suitable size.
Pour the water and 3.4 fl oz (100 ml) of the apple cider vinegar.
We cover the pot with the lid and put it on the stove to boil.
When it starts to boil, reduce the heat and let it simmer for 20 minutes.
During this time, we clean the garlic and finely chop it.
We put them in when the peppers have already boiled for 20 minutes on the stove and we have pulled them aside.
Blend the mixture.
I passed it through a sieve for a finer sauce.
To this chili sauce mixture we add the remaining 1.7 fl oz (50 ml) of vinegar, the sugar and the salt.
Stir well so that the sugar melts and then place it back onto the stove.
We continue to boil the sauce on moderate heat and this lasts about 20 minutes.
When it thickens as much as we want it to, add the citric acid and boil for another minute.
This type of sauce, I pour while still warm, into pre-warmed bottles or jars.
Close immediately with lids and turn them with the lid down.
The sweet chili sauce is served with fries, chicken wings or fried drumsticks.
