Ingredients

  • onions - 1 onion (large)
  • garlic - 2 cloves
  • butter - 1.7 oz (50 g)
  • olive oil - 1 tbsp.
  • white wine - 2/5 cup (100 ml)
  • broth - 1 4/5 cups (450 ml) veal/beef
  • flour - 3 tbsp.
  • salt - by taste
  • black pepper - by taste

How to make

Lyonnaise sauce is an onion sauce suitable for all types of meat or meatballs. It is one of the classic basic French sauces and is extremely tasty.

I present you with an easy version for its preparation.

Cut the onion into thin crescents and the garlic into slices.

Melt the butter with olive oil over moderate heat and fry the vegetables until they aquire a lightly golden brown color and soften. It is important to cook the onion and garlic slowly, in order to soften, not to burn the outside and remain crunchy on the inside.

Add the wine and after a minute, when it has reduced and the alcohol evaporates, pour the flour and stir for a minute.

Pour the broth, while stirring constantly, so that no lumps form. Stir for about 10 minutes, until it thickens and add more of the broth, if necessary. Stirring at all times is important if you are going to serve the sauce without blending it. In case you prefer it fine, the remaining small lumps will disappear when blended and it will become perfectly smooth.

Season with salt and black pepper.

Serve the delicious Lyonnaise Sauce with roasted meats or meatballs.
