The zucchini are grated, salted and left for a short time. Then they are strained through cheesecloth or a strainer.

Beat the eggs with the cream in a bowl. The rest of the products are gradually added. Use a whisk, not a mixer.

Finally, add the strained zucchini and mix with a spoon. You can bake the mixture in all kinds of molds, maybe all at once in a small baking pan. I decided to use silicone molds for the keto muffins, which I greased with a little butter.
