How to make
Crumble the yeast into the slightly warmed water with the sugar and let it activate for a few minutes.
Sift the flour into a bowl and make a well. Pour olive oil, salt and yeast into it. Knead a smooth and elastic dough and leave it in a bowl covered with a cloth for 30-40 minutes or until doubled in size.
Form the risen dough into a ball and roll it out into a very thin crust on a floured surface or directly on a sheet of baking paper.
Distribute the yellow cheese, cut into thin strips, leaving 4-5 cm of the edges uncovered, which you then fold inward and seal. Go over with the rolling pin to flatten and thin out as much as possible. This will give you a pizza crust with cheese filling.
Spread the surface of the pizza with the tomato sauce, sprinkle with oregano and arrange pieces of fresh mozzarella and sausage on top. Finish off by sprinkling with the mature mozzarella.
Bake the pizza at 430°F (220°C) for 15 minutes in a preheated oven.
