  • udon noodles - 1/2 package
  • tofu - 3.5 oz (100 g)
  • carrots - 1 pc. smaller
  • shiitake mushrooms - 3.5 oz (100 g)
  • spring onions - 1 stalk, larger
  • cabbage - 2 handfuls, cut into strips
  • miso paste - 1 - 2 tsp.
  • soy sauce - 2 tbsp.
  • liquid honey - 1 tbsp.
  • black pepper - 1 pinch
  • sesame oil - 1 tbsp.

How to make

Boil water for the noodles. During this time, cut the vegetables into strips and the onion finely. The tofu is cut into cubes.

Mix the soy sauce, miso paste and honey in a small bowl or cup and add black pepper. Mix well.

When the water boils, cook the noodles according to the instructions on the package.

Heat the sesame oil in a deep pan and pour the vegetables - spring onions, mushrooms, carrots and cabbage.

They are fried for a few minutes, then the liquid mixture is poured in and everything is mixed well.

Add the chopped tofu and stir again to mix everything.

Finally, add the cooked and strained noodles and mix everything again and remove them from the heat.

When serving the Japanese udon noodles with shiitake and tofu, more soy sauce is added separately to each portion.
