"This Japanese mushroom soup recipe may sound weird right now, but only because you havent tried it yet. You will fall in love with its unique taste"

Ingredients

  • japanese somen noodles - 5.3 oz (150 g)
  • shiitake mushrooms - 3.5 oz (100 g)
  • tofu - 7 oz (200 g)
  • spinach - 2 handfuls (washed)
  • spring onions - 1 stalk
  • miso - 2 - 3 tbsp. (light paste)
  • ginger powder
  • sesame seeds
  • salt

How to make

The shiitake mushrooms are cut into chunks and the tofu is diced.

Dissolve the miso paste in 3 1/5 cups (750 ml) of boiling water, add the ginger and add the mushrooms. Leave them for about 2 minutes.

Put the noodles in boiling water and leave them covered with a lid on a switched off hob for about 5 minutes.

Add the diced tofu, washed spinach and as much salt as you like to the mushrooms, if necessary.

Strain the somen noodles well.

Distribute the somen noodles into bowls and distribute the mushroom soup. Sprinkle with chopped spring onions and sesame seeds.

The Japanese mushroom soup with shiitake mushrooms is ready.
