How to make
Clean and wash the mushrooms. Cut them into pieces and the stump can be removed, because it is tougher.
Melt the butter along with the olive oil over a medium heat and stew the sliced mushrooms under a lid for 8-10 minutes.
Add the garlic (cut into thin slices), as much salt as you like and pour the wine and drops of soy sauce. Leave the cookware open for 3-4 minutes, then cover it again and stew for another 15 minutes or until the mushrooms have completely softened.
When ready, remove them from heat and stir with the lemon juice. If desired, you can season with black pepper and chopped parsley.
This way, the Shiitake mushrooms become very tender, melt in your mouth and turn out delicious, as they usually are. They are ideal for an aperitif, appetizer or side dish.
