How to make
Pork loin is a meat, which is cooked very quickly and when cut into fillets, is best cooked in a pan, as it often dries in the oven, even if it has been marinated for a long time.
For this recipe you need 4 fillets with a thickness of a little more than a centimeter and a weight of 3.5 oz (100 g) each. Marinate them for a few hours in olive oil, white wine, black pepper, cayenne pepper, rosemary and lemon juice. Do not add salt.
When they are ready, take them out and leave them at room temperature and cook the mushrooms. Wash them very quickly under a stream of running water, so that they don't soak up the water. You can also wipe them with a damp, clean cloth. Cut the stumps if they are tough.
Cook the shiitake mushrooms in a pan with a little olive oil over a high heat and when you turn them over, crumble the blue cheese on them. The pan should have a wide surface and the mushrooms should not be stacked, so if necessary, prepare them in two portions.
Once the cheese begins to melt and the mushrooms have aquired an appetizing color underneath, remove them with a spatula and divide them into two portions.
In the same or another clean pan, cook the flavored fillets, again on high heat and until they're nicely browned on both sides.
Put two pork fillets per serving with mushrooms and season them with salt.
Serve the easy and delicious pork loins with shiitake and blue cheese dish while it's warm.
