How to make
For the dough:
For the biscuits, combine all of the dry ingredients in a bowl and stir.
Add the melted butter, vanilla, maple syrup, grated lemon peel and juice and mix. The mixture will be sticky. Wrap it in foil and leave in the fridge for 30-40 minutes.
For the topping:
Place the almonds, pecans and peanuts in a blender/food processor and blend, until a coarse mixture is obtained. Add the dates, lemon peel and juice and maple syrup. Blend, until the dates are grinded and the mixture is heavy and sticky. It is taken out.
The cooled dough is scooped out with a spoon, the amount is optional, but about 1/2 tbsp. Place it on baking paper and gently roll out with a rolling pin to form a flat circle. Cover with a mixture of the nuts and dates, mostly in the middle and press them down lightly.
The almond biscuits prepared in this way are arranged in a flat tray lined with baking paper with a small distance from each other.
Bake at 330°F (165°C) for about 12-14 minutes, just until the edges aquire a golden color. Do not overcook the biscuits, they should be soft when they comes out of the oven.
Cool them for 10-15 minutes and then remove and place them onto a wire rack.
The grated orange peel, ginger, cinnamon, cardamom can be used as flavorings - it's all a matter of choice and taste.
